San Fairy Anne Sportive Start Selfie!

This weekend was not been as eventful as last weekend! I have been taking it fairly easy. Training depending on how I feel; teaching spin classes, doing some easy runs and swims. Monday I took out my frustration from last week with the San Fairy Anne Cycle Sportive, 120km to Rye and round Kent .There were a few hills and I was pleased with a fairly quick time (I would have been quicker but I did wait for Dad). It was a lovely route, well organised with a fantastic cake fuelled pit stop at 50 miles and a huge spread of food after where we stuffed our hungry faces! All for £15, bargain! The club raised over £4000 for Kent Air Ambulance. I didn't get hypothermia this time :) I may have wrapped up a little too much and was quite warm (better than being cold!)

Since I've had a bit more time on my hands recently I've rediscovered my old love for baking, I made these cakes on Saturday. Their gluten free and grain free, made with coconut flour (a healthy alternative to normal flour) and went down a treat with my friends. To fit the GB trend their in union jack cases,  I have shared the recipe below I used my Nutri-bullet to blend them which worked really well...

Vanilla Cupcakes:

  • 1/2 cup coconut flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 4 large eggs
  • 1/3  coconut oil (or butter)
  • 1/2 cup honey or maple syrup
  • 2 tablespoons milk or other milk (coconut, almond or soya if lactose free)
  • 1 tablespoon vanilla extract
  • seeds from one vanilla bean (optional)

  • 1. Heat the oven at 175 degrees C, (350 F)
    2. Mix all the dry ingredients,
    3. Add the wet ingredients slowly and blend,
    4. Place in cupcake liners to about 3/4 (they don't rise much)
    5. Bake for 20minutes - until the knife comes out clean.
    6. Wait to cool and decorate!

    Makes 8-10, I would double the recipe...

    Icing-
    You can decorate the cakes how you like depending how healthy you want them to be....
    Honey and Sprinkles works well,
    or Vanilla Buttercream (not so healthy)
